Crisp and Buttery Parmesan Crackers

Another recipe from one of my current favorite cookbooks ~
"Simple Soirees" by Peggy Knickerbocker

Essentially a shortbread recipe flavored with good Parmesan cheese.

I made mine with aged Parmesano Reggiano which is drier than younger Parmesan. If you use the younger, moister parmesan your crackers may spread a little more than mine did.

Either way, the flavor and texture is divine ~ perfect with your favorite beverage or as a good offering on the cheese or fruit platter.
In Peggy's version each cracker is adorned with a single pine nut ~ I made some that way,

and some with tiny tips of fresh thyme;

Others with a pinch of Piment d'Espelette
(the spicy red pepper powder from the French Basque country.)

Since I changed the garnishes, I simply renamed them
Crisp, Buttery Parmesan Crackers.

Yummm, they are soo good!

  1. These look so delicious, Mari. I like that they can be made ahead and then cut/baked as you need them. I think they'd be great with a fruit platter!

  2. Your food looks just yummy! I have been derelict in cooking lately. I've been busy out in the garden. I sure wish I could let you harvest my many herbs for your delectable dishes! You don't live near East Texas, do you???

  3. Mary, I'm so happy you are posting food pics again. I've missed my daily fix. Those crackers look so buttery. I can almost taste them.

  4. I can't believe how great these look, Mari! What a lovely treat to go with a glass of Chardonnay.

  5. Sigh.....send me one...they look so delicious!

  6. Are my eyes deceiving me, or have you done away with the beautiful blue background?
    These look so buttery and versatile. A must try.
