Chilled *Fresh* Pea and Bacon Soup

I know parts of our continent are still dealing with snow, but recently we've had a few beautiful days; sunny with temperatures in the mid-seventies.

Finally!

The warm weather had me longing for a chilled soup ~ so I made this one.

It's a take off on a Soup by Gordon Ramsay;
Chilled Fresh Pea with warm Bacon and a Cream Drizzle.
It also contains some shallots for depth of flavor.

No fresh peas in my garden yet, so I used frozen peas ~
probably not what Gordon had in mind, but flavorful and fresh-tasting just the same.

The bacon looks really flat, doesn't it?

I usually bake bacon on a rack, placed in a shallow, rimmed sheet pan, a
tip shared by Julia Child a million years ago. :)

This time I baked it sandwiched between two heavy pans~
I wasn't so pleased with the results; it looks abnormally FLAT,
in my opinion.

I'll stick with the tried and true way ~ on the rack, in a 350 * (F) oven
until as crisp as desired.
No worry about turning, splatter or messy cooktop.

A few spring posies from the newest garden to brighten the table.

How I miss them in the winter months, I'm so happy they are back.

  1. Gorgeous-looking soup, Mari! I like the idea of warm bacon with a chilled pea soup. I need to try this soon - the weather is supposed to warm up around here by the end of the week. This will be perfect!
