Green Bean and Bacon Salad

This is one of my favorite Tyler Florence recipes ~ it's fairly healthful (if you don't count the bacon), very flavorful and goes together quickly.




Simply crisp the bacon in a skillet and drain, briefly blanch the green beans in boiling water, drain and plunge into an ice water bath to stop the cooking and set the color.




Toast the walnuts (or pecans) and shake up the simple dressing in a jar.



Arrange the ingredients in a bowl on on a platter. Right before serving, toss with the dressing and dig in!

I love this salad.



It's perfect for a potluck, or party because it can all be made ahead, then just tossed with the dressing when ready to serve.

Chicken Marsala ~ Tyler Florence Fridays

For this week's Tyler Florence's Fridays I chose to make his version of Chicken Marsala.



It's one of those dishes which is difficult to capture in an appealing way ~ but believe me, it is delicious!



Using boneless, skinless chicken breasts, pounded thin ~ with strips of Prosciutto (Italian dry-cured ham), sliced mushrooms and sweet Marsala the dish goes together very quickly.



I served it with steamed green beans from the garden, and oven-baked Parmesan Risotto.



I followed Tyler's recipe exactly, the only change I made was to add some crisply fried fresh sage leaves (a method I use with my other favorite Chicken Marsala recipe), not necessary but it adds a nice flavor and textural contrast.






This received raves at my house,if you like Chicken Marsala I think you'll like Tyler's version, too!

Field Trip ~ to Tyler Florence's Place




During my recent trip home to visit my family in the San Francisco Bay Area my son and I made a visit to Tyler Florence's store in Mill Valley, California.



The town of Mill Valley is located a bit north of San Francisco.
September and October days in SF can be surprisingly beautiful, clear and warm. This day was no exception.
If you're coming to visit ~ try to be here in Autumn; the weather is generally more temperate than other months.

The store is reminiscent of the good old Williams-Sonoma of 30 years ago when Chuck Williams was piloting the helm. Tyler's store is warm, welcoming and well stocked with a wonderful selection of most any equipment you might need for cooking or entertaining, along with plenty of hand-selected antique and vintage items.















My clever son. :)







No Tyler sitings but we had a fine time shopping and visiting with the friendly staff.

Tyler's "Everything" Tuna Sandwich ~ TFF & FF

This is my selection for Tyler Florence Fridays this week.

I was looking for a light, easy to prepare dinner on a warm summer evening and came across this recipe of Tyler's ~ this looked like it would fit the bill perfectly.




Not wanting to make a trip into town to the store for a couple of the ingredients, I made some minor changes which I've noted below.


His recipe is quite similar to our favorite tuna salad; mayo, lemon juice, dill, cornichons, capers, salt and freshly ground pepper.

Tyler's version is served on a toasted "Everything" bagel, smeared with cream cheese, topped with Bibb lettuce leaves, sliced cucumbers and tomatoes, then the tuna salad.


However, since I was using fresh basil leaves instead of lettuce in the sandwich I omitted the fresh tarragon his recipe calls for; and substituted snipped fresh chives instead as I think they compliment each other very well. I also roughly chopped the capers.

Again, wanting to avoid a trip to the store I substituted ciabiatta rolls for the bagels. I think the seeds and minced onions from the "everything" bagel would be delicious and I'll plan on trying it that way next time.

I used solid white albacore, packed in olive oil (well drained.)





One other note ~His recipe calls for three cups of canned tuna (for two servings?!) so I reduced the amount by half, allowing a generous amount for each sandwich, but still there was plenty leftover. I figure his sandwiches must be substanially larger than the ones I made.




All in all, it was a delicious sandwich which received thumbs-up around the table; I would definitely prepare this one again, next time on the 'everything' bagel, as well as with the tarragon and lettuce.
