5 Minute Artisan Breads ~ Three Ways

Another three breads adapted from "Artisan Bread in Five Minutes a Day" by Dr. Jeff Hertzberg and Zoe Francois.

It's such a versatile dough, and I've barely scratched the surface of the seemingly endless variations. Here are three examples:

From left Ciabatta, front; Kalamata Olive-Walnut with Herbes de Provence, right; Plain Boule.

I've been baking bread for a long time, and this is one of the most FUN concepts to work with. If you don't have the book, I highly recommend it.

The good news is that no special skills are needed to produce artisan breads, the book walks you through each step. Even if you've had bread baking nightmares in the past, I urge you to try this technique ~ I think you'll be surprised at your triumphs!

  1. I would really like to get more into bread baking but find it VERY time consuming and messy . . three questions for you that may seem stupid but hey . . . bread is not my forte . . . 1- did you use a mixer/bread hook to mix your bread 2- was it very time consuming 3- did you have a favorite that you made?

  3. Dear Mari,
Great job on the loaves! They all look very rustic and have an artisan-feel to them. I have the book too and the recipes are fun to play with. Looking forward to reading more of your posts,
    Jackie

Emily! Please play this video ~ you may not believe how easy it is to make this bread. It amazes me every time I use this technique.

Here is the link to the authors of the book demonstrating the recipe.

    I hope you'll try it.

Hi Heidi! I really like the olive loaf too, and the wonderful thing is... if you have household members that aren't fond of a certain choice/combination you can make an 'individual' size to enjoy. Such a fun dough to play around with.

Hi Jackie, Welcome in! Thank you so much for the kind words. Please come visit whenever time allows.

  8. Mari, I've only been away a few weeks, and already I have so much to catch up on.
The loaves look so delicious; I would dive into that basket of breads, as is. No butter or spreads necessary.
I will vouch for the olive bread, but most of the breads I've made from the book, so far, have turned out very well.

  11. Those breads are gorgeous! I've seen other posts relating to this book, but honestly, with so many recipes on the internet, I'm so wary of buying yet another cookbook! But... I do love to make bread, but it never turns out looking as pretty, or sounding as good as these... so I may have to get the book. LOL

  15. Thank you so much everyone!

Congratulations Karen, I wish you many happy baking days using your new book.

Hi Linda, I find the dough is much easier to handle after the second day. These were all made from third day dough. (Hope that helps!)

    Thanks for your comments everyone!
