I had all the ingredients for this salsa on hand, and a couple of nice Red Snapper fillets ~ so I gave it a go.
I love dishes like this ~ you can make the salsa a bit ahead of serving time, then just grill the fish which just takes moments ~ and dinner is served.
This could be cooked on the outdoor grill, but this time I cooked it on the stove top grill.
The salsa complimented the mild tasting snapper very well, the jalapeno, red onion, cilantro and lime juice were a surprisingly great combination.
It received thumbs up and I would make this one again ~ and if you have friends who like fish this would be an easy casual dinner party entree.

Thank you so much, Mari, for so many healthy, eye appealing recipes. I have no excuses for not improving my diet. Love this salsa with the strawberries and avocados.
That looks delicious! I love strawberry and avocado together. A sushi place that I used to frequent served an eel roll with thin slices of strawberry and avocado on top. Soooo good!

I have cataloged some of the recipes in a printable format on my recipe blog, Once Upon a Plate ~ the recipes. Please LEFT-MOUSE click HEREif you would like to see what is available there.
